Latitudes: an avant-garde restaurant

In Calle Uruguay, is Hotel Le Méridien Panamá, which includes Latitudes restaurant, lead by Panamanian chef Aníbal Chiari , who presents a contemporary fusion concept of international cuisine.

The locale has capacity for 75 customers, and a private dining room and a communal table. Latitudes also offers author´s breakfast Le Méridien, with reinvented favorites developed by chef Jean Georges Vongerichten, with three Michelin stars, and a global program developed along with illycaffé.
Chiari indicated that at the reaturant they offfer breakfast, lunch and dinner, all a la carte.
 The chef pointed out that the restaurant is a different option for the client: for those who want to “discover something uncommon”.

He explained that for example, they offer a crepe with spinachs, herbs and cheeses, one of his innovative plates, just like the croque madame- which is a toast with bacon, and two eggs accompanied by a special mayonnaise with a light spiciness.
They also offer regular breakfasts as the American, continental and Panamanian .
For lunch they have, besides sandwiches, plates basically fusion.
 “More than fusion I would talk about an avant- garde cuisine , where everything is fresh and there´s a lot of mixing of something spicy and something sweet,” the chef said.

The special
The presentations of his plates are different in the market, since they don´t try to serve the accompanying food in the dishes like the competition does, as for example with the Cocus israelí (a pasta), which goes with fish.
The chef said the prices of his plates are similar to those of the competition, not only in hotels, but also in restaurants located near the locale in Calle Uruguay.
Another of the differences of the restaurant with the competition is that they offer some raw material others don´t have, such as lamb, duck breast and others.
The chef pointed out that they are about to debut a new menu and invited the Panamanian gourmet public to enjoy a different experience by visiting the restaurant.
